Rivalus At Home Recipes: Dark Chocolate Protein Cupcakes (with Peanut Butter Greek Yogurt Frosting!)

INGREDIENTS FOR CUPCAKES:⠀

  • ½ cup of your favorite Rivalus chocolate protein powder (We suggest Rival Whey Warm Ups Hot Cocoa!)
  • ½ cup low fat (or nonfat) greek yogurt
  • ⅓ cup unsweetened almond milk (or other milk)
  • ⅓ cup unsweetened cocoa powder
  • ½ cup gluten-free oats (or oat flour)
  • ½ cup liquid egg whites
  • 2 Tbsp peanut butter
  • ½ Tbsp stevia flavoring drops (or 2-4 packets regular stevia)
  • ½ tsp baking soda

INSTRUCTIONS:⠀

  • Preheat oven to 350 degrees F
  • Blend all ingredients until smooth, and no lumps
  • If mixture is too dry, add a little more almond milk
  • Fill baking cups about 2/3 full with cupcake mix
  • Bake for 35-40 minutes, or until toothpick come out dry

INGREDIENTS FOR FROSTING:

  • ½ cup low fat (or nonfat) greek yogurt
  • 1 ½ Tbsp creamy peanut butter
  • 1 Tbsp cream cheese
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract

INSTRUCTIONS:⠀

  • Mix all ingredients together
  • When cupcakes are cooled, frost generously
  • Add any desired toppings (sprinkles, cocoa powder, etc.) and enjoy!
